Banana bread.

There is something “je ne sais quoi” about banana bread.

The aroma permeates the house and is both warm, spicy and welcoming.

Try this recipe for banana bread

Honestly, if there was an essential oil of banana bread I’d have it in the burner ALL the time!!

It is moist, nutty and extremely delicious.

Play around with the flour, nuts and spices to create your own special “ness”.

Ingredients for banana bread

  • 1 3/4 cups (260g) plain, wholemeal or gluten-free flour (or 1 cup flour + 3/4 cup almond meal)
  • 1/2 tsp ground cinnamon, allspice, nutmeg or combination
  • 1/2 tsp baking powder
  • 1/4 tsp bicarbonate of soda
  • 2/3  cup (150g) dark brown sugar
  • 100g chopped walnuts, almonds or pecans (or your fave nuts)
  • 4-5 large over-ripe bananas
  • 3 large eggs, lightly whisked
  • 1 tsp vanilla extract
  • 100g unsalted butter, melted, cooled

How to make banana bread

  1. Heat oven to 175C.  Line a loaf tin with baking paper.
  2. Sift flower & combine with cinnamon, baking powder, baking soda, sugar & nuts in a bowl.
  3. In a separate bowl mash the bananas, stir in the eggs, the vanilla extract & melted butter.
  4. Fold the wet ingredients into the dry ingredients until just combined, then pour into the loaf tin.

Bake for 1 hr, although depending in your oven it might need more.

Knife should come out clean.

Ours took 1 hr 15min, but watch like a haze after 1 hour.

Let rest in the tin for 1o mins, turn out onto a wire rack, and eat some warm!
